I topped them with a cream cheese icing (with lime of course). It was my very first attempt at gourmet cupcake making, and they turned out great! They were a huge hit at the shower. Everyone asked me where I bought them! I actually used the recipe right off of King Arthur Flour's website with very few changes. Baking is fickle, one person's dream dessert is another's garbage! I will probably try a coconut frosting, too.
